What we are eating: Slow cooker shredded chicken.

A big pot of this simple shredded chicken on Sunday night is the best thing to have on hand for a busy week. I throw it on salads, scrambled eggs, tacos—the possibilities are endless.

What we are playing: Thomas Minis

We are preparing to head out for a long trip. In the past, I have brought along a small surprise toy to give to the toddler when we head out. The problem? He wasn’t interested in the toy. This time I gave him the toy early to be sure it was something he loved–and he did.

What I am wearing: Birkenstock slippers.

The best thing I did when having kids was to invest in good quality home attire. The piping hot Texas summer has been keeping us indoors. But I am still on my feet all day, and my feet are thankful for these Birkenstock slippers

What I am pondering: Potty Training.

To me, there is only one potty training book worth reading: “Oh Crap”. We had great success with this book, although with traveling on the horizon I am finding myself wondering how the toddler is going to handle potty-ing in new places.
